Honey & Blueberry Ricotta Toast
How to make ricotta toast with honey-poached blueberries, crushed pistachios, and fresh lemon zest. Plus storage tips for herbs and berries.

🛒 INGREDIENTS 🛒
½ cup honey
1 sprig fresh thyme
1 cup California blueberries
Pinch of sea salt
4 slices brioche bread
½ cup whole milk ricotta
1 tablespoon chopped pistachios
1 teaspoon fresh lemon zest
🔪 INSTRUCTIONS 🔪
Add ½ cup of honey to a small saucepan along with 1 sprig of fresh thyme. Warm the honey over a medium heat until it begins to bubble around the edges and around the mixture. But do not bring it to a full boil.
Add in ½ cup of fresh California grown blueberries and a pinch of sea salt.
Stir the mixture to completely coat the blueberries in the honey and mix in the sea salt. Cover the pan and set it aside, letting the thyme fully infuse the honey for at least 3 minutes.
Toast the 4 slices of brioche bread.
Divide the ½ cup of whole milk ricotta between the 4 slices of toasted brioche.
Scoop out the blueberries that have been poached in the thyme-infused honey, removing as much honey as possible, then top off the ricotta.
Finish the honey & blueberry ricotta toast by dividing 1 tablespoon chopped pistachio nuts and 1 teaspoon fresh lemon zest between the slices.

My new favorite salad topping! I used salt, pepper, onion powder, garlic powder and smoked paprika. Excellent and they keep in a sealed container in the fridge for days.

they are both fruits. bananas have seeds, look closer. :-) but only bananas are berries

Last thing I swear.. you should try warm ricotta with warm honey, fresh olive oil, sea salt with crusty fresh bread of choice for dipping..oh! And the recipe I found Said I was supposed to use crushed pistachio garnish..but I didn't have that part but it was HEAVENLY❤

Thank you sooo much bc this really was a great eye opener for me. Especially the different ways you use each sauce, especially the longevity (I loved your explanation of how long each will last once opened and/or used but especially once it’s past it’s use by date and how to buy and store each, Thank you so much bc you truly explained the questions I had for that thick soy sauce. I’ve been wanting to step onto new territories & I want to try many new sauces and so this was really a great eye opener for me so 2 Huge thumbs up from me.
